How To Choose Whole Grain Flour Mixes For Baking

By Claudine Hodges

Cooking with whole grains is different to using refined white flour. There are several things to consider when choosing whole grain flour mixes for baking as they change both the texture and flavor of cakes and breads. However, these foods are so much better for our health that it is worth learning a few new tricks in the kitchen.

Firstly, we should define whole grains. They are grains which have been left in their natural state, or as close to it as possible. There are three parts to a grain, the germ, bran and endosperm. Lots of milling removes the germ and bran and just leaves the starchy endosperm. This makes a very fine flour but it removes most of the essential nutrients.

Research has shown that grains contain high levels of phytochemicals and antioxidants so they can be an important part of a healthy, balanced diet. Many scientific papers have shown a link between grain consumption and obesity, diabetes, heart disease and cancer. These nutrients seem to be highly involved in lowering inflammation and helping the body to fight disease.

There are lots of whole grains to choose from to use in baked products. These days there are over twenty types which are generally available in supermarkets and health food shops. Many stores also sell pre-mixed flours which contain a combination of grains for different types of baking.

An important consideration when baking with grains is whether they contain gluten or not. This is critical in making bread because gluten is what gives bread its chewy texture and it also helps the dough to rise. Using grains which do not contain gluten will change the results of the baking quite dramatically. This does not mean however that gluten is essential but it is important to think about how the ingredients in will react. There are several substitutes for gluten such as xantham gum, chia and flaxseeds which all have elasticity.

Making cakes and muffins with whole grains also creates fantastic results. Finding a flour mix which has a large percentage of lighter flours such as rice flour will produce fluffy cakes. Using oats or buckwheat will produce a denser texture but a more tasty dessert.

It is not necessary to use only whole grains. Initially many people find them too heavy and prefer to mix them with refined flours. A good ratio to start with is fifty:fifty. This will give rise and lightness but the food will still contain lots of nutrients.

Baking with knew flours can be an exciting experience for any baker. The variety of results is fascinating and delicious. Finding these knew grains is increasingly simple as large stores and online suppliers sell more and more of them to cater to increasing demand. It is possible to buy pre-mixed bags of different flours or by them separate and mix them at home.
